Egg White Medallions

Egg Whites looking as pure as snow come with a bit of a salty taste.



Ingredients:

  • Two Large Eggs

  • One teaspoon of olive oil

Cooking Time:

  • Preparation Time: One Minute

  • Cooking Time: Four Minutes

Recipe:

  • Coat the bottom of a rectangular egg pan with olive oil. Do not pre-heat the pan to avoid browning the of the eggs.

  • Pour the egg white from two large eggs in to the pan and discard the egg yolk and shells.

  • Cook a lower than medium heat for four minutes till the egg becomes opaque.

  • With a plastic ladle make a cut in the middle and fold the egg into two rolls.

  • Move the rolls into a plat cut into squares.
