Sweet and Sour Bitter Melon

Bitter Melon that is not bitter

Ingredients

  • One large Bitter Melon

  • Two teaspoons of Olive oil

  • Salt to taste

  • Two teaspoons of Tamarind paste

  • One teaspoon of Honey

Cooking Time

  • Preparation Time: 3 minutes

  • Cooking Time: 15 minutes

Cooking Method:

  • Cut and discard the top and bottom end of the bitter melon.

  • Cut into four pieces, length wise and scoop out the seeds and white membrane and discard.

  • Slice the bitter melon quadrants into thin (1mm) slices.

  • Place the bitter melon slices in a microwave steamer dish. Add olive oil and salt. Place the lid and shake well to coat the slices with oil and salt.

  • Steam the vegetable at 500W for ten minutes.

  • Use oven mitts when removing steaming dish from the microwave as the temperature may reach up to 90C.

  • Rest the steamed vegetable for five minutes.

  • Lift the lid of the streamer facing away from you to avoid burns from the raising steam and transfer the cooked bitter melon into a serving dish.

  • Add tamarind paste and honey and mix well.
